For storing dataPoints after shift+click you can use click event along with window.event.shiftKey. Here is an example with zoom-Pan.

As of now, we don’t have a function that is triggered when the render is complete. But given that all dataPoints in chart are rendered at once after calling chart.render() & CanvasJS can render hundreds of thousands of dataPoints in few hundred milliseconds, so you will have no issue calling a function after calling chart.render().
In case you are still facing the issue, can you create JSFiddle reproducing the issue, so that we can look into the code, run it locally to understand the scenario better and help you out?

You can format your json data across multiple series as shown in this example
It should instead be e.chart.options.axisY2.maximum
In this case you can use formatNumber along with labelFormatter or indexLabelFormatter function as shown in this JSFiddle.
Without knowing which server side technology you are using, we can’t direct you. So, can you please post your sample Json data along with code

I just tried creating chart with your first set of options and it seems to be working fine. If you can reproduce the issue on jsfiddle, we can figure out the problem.
From your question, it looks like you are just looking for a break in the line. If so, you can insert empty dataPoints in between two set of datas as shown here. http://jsfiddle.net/canvasjs/rw563ftt/
